Rustic tart with apricots and apples

The simplest tart to bake. You don't even need a special tart tin. As a filling, you can use seasonal fruit that you already have at home. I used apricots and experimented with herbs that I added to it. Mint, cardamom, thyme...


INGREDIENTS:
1 1/4 cup flour
2 tbsp powdered sugar
pinch of salt
125g cold butter, cut into pieces
3 tbsp of ice water

  1. Mix the flour with sugar and salt, add butter, 3 tablespoons of water, chop with a knife to obtain crumble, then knead quickly (the dough can also be made in a mixer). Form a ball into the dough, wrap in cling film and cool in the fridge for 30 - 60 minutes.
  2. Roll out the cooled dough to form a cake about 30cm in diameter. Transfer to a flat baking tray lined with baking paper.
  3. Sprinkle the rolled out dough with cardamom and sugar, leaving 5 cm from the edge to wrap the dough inside. Layout sliced apples, cut in half apricots and then sprinkle with mint and thyme. Wrap the edges of the dough for the filling. You don't have to try hard to make it even - including all the grated charm.
  4. Bake at 200°C for about 35 - 40 minutes, until the filling, begins to cook clearly and the dough turns golden (you can reduce the temperature to 180°C in the middle of baking).
  5. Remove from oven, put on a cooling rack to cool, then transfer to a large plate. The rustic tart with apricots might be served warm as well, e.g with vanilla ice cream.

FOR FILLING:
500g apricots
2 large apples
1 tbsp cardamom
3 tbsp sugar
mint
thyme
