INGREDIENTS:
500g penne
1 broccoli
200g feta cheese
1 tbsp basil pesto
1 handful of cashew nuts
fresh basil leaves
1 tbsp olive oil
- Cut feta cheese in small cubes.
- Boil a large pot of water with 1 tbsp salt, add penne. Do not overcook the pasta. Add the brocolli 3 minutes before penne is cooked. Drain the penne with broccoli in a colander.
- Drain the penne with broccoli in a colander. Put them back into the same pot on turbned off stove.
- Add basil pesto, feta cheese, olive oil and stir vigorously.
- Serve immediately, garnish with fresh basil leaves.
